For spring 2024, I produced a limited amount of ground turkey (dark and white meat blend) with a breakfast sausage spice mix added. I'm not normally a fan of sage, but this breakfast sausage blend was a winner. Spices include salt, pepper, garlic, and sage, with a tiny bit of cayenne for a little zing. A quick pan fry of small patties with a couple of duck eggs made a winning breakfast.
