I love a good chicken sandwich, but I couldn't find what I wanted at the deli counter, so I started making a preservative-free sliced lunchmeat. When it turned out great, I decided to add it to my inventory.
I use only breast meat from the chickens I raise, and I season the meat with my chicken broth and my chicken schmaltz, plus a smoked Redmond sea salt. No other ingredients. Cooked and sliced, then frozen, each package contains 8-10 slices, approximately 7-8 ounces.
